The American Statistical Association is updating their guidelines for undergraduate statistics programs and a draft of the guidelines is available (link below). The guide is general, but the position papers and presentations may be of interest. For example, there are Power Points and panel discussions on big data, capstones, how to prepare students for grad school, and what employers are looking for. Experience with SAS is mentioned in several places.
